Yesterday I strapped on my PF Flyers and ran back to 3rd – I’m going to Arizona to visit Ally! It should be a lot of fun and a nice treat to myself after being an unpaid nurse for my sister. =) I found a great deal on a flight from San Francisco to Phoenix and then to Grand Forks – it cost about $10 dollars more than if I were to skip out on AZ and fly directly home.. couldn’t pass it up!
This morning I gave in. I had ran out of fruit yesterday and did it: I jumped on the oats with almond butter bandwagon. The verdict? It will be making weekly appearances for breakfast from now on! =) It looked a lot prettier before I dug in…
My breakfast oats were pretty simple, but I’m looking forward to experimenting with different ingredients! In my mix was:
- 1/2 c. oats
- 1/2 c. water
- 1/2. skim milk
- 2 dashes of ground ginger
- 3 dashes of cinnamon
- a splash of vanilla
- a spoonful of T.J.’s Almond Butter with sea salt =)
Last night’s dinner will be making a repeat tonight. I found the recipe on Epicurious, made a few minor adjustments and LOVED this salad. It had balsamic sauteed onions, homemade candied walnuts and herbed goat cheese. Mmm!
After the walnuts cooled, I started sauteing the red onions…
And then assembled!
It was soooo good. Adding this one to my recipe box!
I’m off to go watch the USA Women’s Hockey team take on our neighbors to the North! Since Linsey only has NBC and they’re not airing it, we have to head to the bar. Hope everyone is enjoying their week – it’s almost Friday!
